The much-anticipated opening of Fergusons Downtown has started with the opening of Hatsumi. Tucked into the bottom level of the community block, the Japanese restaurant by popular Las Vegas Chef Dan Krohmer offers vegan options, some of which feature local Desert Bloom Eco Farm offerings.

Hatsumi offers a chill, neighborhood vibe thanks to its brick walls, thick curtains and street art from Depressed Monsters, which dot the landscape in the Downtown block.

Krohmer’s restaurant features a rotating vegan menu (sometimes even nightly) based on what products are available and can include ridiculously fresh veggie skewers like asparagus, shishito peppers and tomatoes. Be sure to let them know you’re vegan so they can marinate them in the vegan tare sauce.

Order the chilled silken tofu appetizer to accompany the light-bite skewers. This dish is served in a bed of mushroom soy sauce and topped with delicate Desert Bloom pea tendrils and maitake mushrooms. Pro tip: graze your bite along the wasabi and ginger on the side of the bowl to experience the full flavor of this simple, yet delicious dish.

For something cooked, we’re all about the eggplant katsu. The eggplant comes lightly battered in rice flour and served crispy (make sure to let them know you’re vegan so they don’t serve the kewpie with this dish).

Add the chicken salad to your order — hold the chicken — and dive into this crisp bowl of cabbage, pickled cucumbers and jalapeños topped with cashews and tossed in a miso vinaigrette.

Other vegan menu items at Hatsumi include veggie-filled gyoza (make sure you confirm the gyoza is vegan the day you go, as these are made fresh daily and may contain eggs at times), lightly-seared mushroom tataki, and blanched local spinach with a sesame dressing.

Hatsumi also offers a vegan omakase tasting menu starting at $55 per person available by reservation only.
