Palace Station offers vegan options in Las Vegas. The newly revamped resort has become quite vegan-friendly with its plant-based additions to Feast Buffet and bBD’s vegan menu. Now, Mumfresh Asian Eats is following suit! Located next to Little Tony’s, this counter service spot features Vietnamese street food favorites separated into three categories: broth bowls, sandwiches, and protein bowls, each of which has a vegan option.

If you’re craving vegan pho, the vegan pho at Mumfresh includes vermicelli noodle, tofu, and seasonal veggies in a flavorful vegetable broth that simmers for hours before being served. Don’t forget to top it off with bean sprouts, cilantro, onion, and jalapeños.

If a protein bowl is more your thing, choose the Tofu Bun Bowl or the Teriyaki Tofu Bowl. Choose your base of vermicelli noodles, jasmine rice, brown rice, or salad. We went with the noodles in the Bun Bowl and jasmine rice in the Teriyaki Bowl.

The Tofu Bun Bowl features marinated, baked tofu topped with bean sprouts, fresh greens, herbs, pickled veggies, peanuts, and a Vietnamese vinaigrette with a lemongrass base. We noticed that the bowls may also come with a side of fish sauce so just make sure specify no fish sauce when ordering.

The Teriyaki Tofu Bowl is packed with sauteed cabbage and seasonal veggies. Which ever bowl you choose, be assured that you will not leave hungry.

The Tofu Banh Mi can be made vegan-friendly, too. Simply skip the pepper mayo when you order. The Banh Mi is served on a French baguette with marinated tofu, pickled veggies, cilantro, cucumber, onion, and jalapeño.

Mumfresh currently does not offer a veganized boba tea or dessert, but we are hoping that changes once the Vietnamese spot notices the demand!
