Now you can eat Ruse every day

The popular vegan pop-up in Las Vegas, Ruse, is now serving meals at Henderson's Public Works every day. For more vegan news, visit www.vegansbaby.com

Ruse is the latest pop-up spot to get a stationary home. Like Bleu Moon Bakery, which now sells many of their pastries at both Joe Maxx Coffee locations in Las Vegas, now you can find some of Ruse’s eats at Downtown Henderson’s Public Works coffee shop.

“We’ve been trying to figure out how to reach our customers more consistently,” says Ruse’s owner Roo Abdel-Al. “By partnering with Public Works, we can further spread vegan options in the community while providing a more stable schedule for people to try our food. We are also trying to partner with other local businesses around the valley. That way, those who cannot come out to our events, can still enjoy our food at a time that is convenient for them.”

Start your day with a breakfast sandwich from Ruse at Public Works

Public Works has always been vegan-friendly, serving vegan pastries and salads, but Abdel-Al noticed after doing a pop-up event there that there weren’t many savory vegan options.

So, she set out to change that.

“Their clientele seemed to enjoy our product so we approached them with the idea about selling our composed dishes,” she recalls. “They were all for it.”

Beginning today, Public Works is now serving vegan dishes prepared by Ruse.

Tofu satay and slay

Head over to the Water St. coffee shop and check out Ruse’s featured eats: a steak pesto pita made with plant-based steak, nut-free pesto sauce and sautéed peppers served in a whole wheat pita pocket; the tofu satay bowl made with lemongrass and ginger marinated tofu served on a bed of cabbage and topped with ginger, pickled carrots, cilantro and topped with a housemade curry dressing; the breakfast sausage bagel made with plant-based rosemary sausage, nut-free pesto, spinach and tomato in a bagel; and the crowd-favorite gyro stuffed into a whole wheat pita pocket.
