The long-awaited Eataly Las Vegas has officially opened its doors to the public inside Park MGM. The famous brand’s Las Vegas outpost is 40,000 square feet and features two restaurants, seven take-away counters, three bars, and a counter-to-table concept. And, it’s quite breathtaking. But, you’re here because you want to know what’s vegan at Eataly Las Vegas.

The short answer: not much.

Eataly Las Vegas has limited vegan options, but they do exist.

First, there’s the Italian Street Food counter. Here, you can find crispy, breaded mushrooms with sage and cayenne.

Over at the Pizzeria alla Pala, you can tweak their pizza (margherita or mushroom) by nixing the cheese. Plus, all their foccacia is vegan, like the pomodorro e pesto made with vegan pesto, basil and Heirloom tomatoes. Just skip the ones with meat and cheese, obvs.

If you’re looking for some caffeine, head over to Cafe Lavazza where they are brewing up Italian espresso, as well as American favorites, and  — yes — they have almond milk on hand! Or step right over to the Gelato counter for a scoop of sorbet for a nice, sweet treat.

The fish monger counter, La Pescheria, offers a few sides that are vegan — patate arrosoto with roasted potatoes, olive oil and herbs, cimi de rapa made with broccoli rabe, garlic and chili, and insalta di rifornzo with cauliflower, pine nuts, olives, radishes, currants and pickled peppers.

At La Pizza E La Pasta, order the marinara pizza or the pomodorro pasta. If you prefer a salad, all but the insalata romana become vegan by omitting the cheese. Steer clear of Manzo, which literally translates to beef in Italian, it will be very tough to navigate that menu. But, we do hope that in the coming months more vegan options become available. When they do, we’ll let you know!

For products to take home, hit the market where you can purchase vegan-friendly sauces, oils, spices, antipasto, and goodies such as these Farro E Quinoa snacks (make sure to check labels).

Be sure to grab a bottle of Italian wine and fresh bread from the Bakery like a slice of fior di zucca (vegan zucchini pizza) or a rustic loaf for a yummy vegan Eataly Las Vegas night at home.

After experimenting with multitudes of fads, she Kat found a lifestyle that turned out to be more than a diet. She settled in Vegas with her husband/photographer Daniel, and puppy, Layla, after traveling the world on cruise ships and living in New York City. The family recently welcomed the birth of their first child, a true vegan baby.
