Blinders Burgers & Brunch Announces Opening Date

The best things comes to those that wait.

At least that’s what we’re going to believe when it comes to the much-anticipated opening of Blinders Burgers & Brunch (6410 N. Durango) in Northwest Las Vegas bringing Las Vegas’s total list of plant-based restaurants including Bar Boulevard and the soon-to-open Tacotarian to a whopping 20.

The burgers/brunch/booze concept first hit the news late March when it was announced the concept would take over the space housing the city’s second outpost of the plant-based fast food spot, Vege-Way North.

After months of transition, Blinders Burgers & Brunch is opening July 30. To celebrate, the plant-based restaurant is serving free Impossible Burgers on their official opening date to the first 100 guests from 7 a.m. – 10 a.m.

The restaurant, which strives to be inclusive and show people who may be skeptical of a plant-based diet they aren’t missing anything, features a who’s who of partners in the community and beyond. Locally, Blinders is bringing in plant-based meat and cheese makers No Butcher, Nourish Creamery and Juice Bar and Virgin Cheese. They also have brought in the well-known Minneapolis-based Herbivorous Butcher, Brewing Good Coffee Company (which donates a portion of their proceeds to non-profit animal protection organizations) and Jones Soda.

“Our mission is to be inclusive and improve the health of people and animals through a plant-based diet,” explains owner Shantell Connor. “We aim to bridge the gap and make plant-based food from delicious and approachable — you aren’t missing a thing at Blinders. Whether you strive to be healthier, to help the environment or save animals, join us. Grab a burger, shake or beer — we’ve got you covered.”

Blinders uses non-GMO, all-natural and local ingredients and serves breakfast, brunch, lunch and dinner daily.

We got our hands on a sneak peek of the menu and can share that there’s a wide variety of eats from breakfast burritos filled with sausage, bell peppers, potatoes, tofu, spinach and cilantro to smashed avocado toast t0 an acai bowl filled with vanilla yogurt, berries and more, topped with sunflower butter. Sandwiches include a Beyond brat topped with grilled onions and relish on a pretzel bun to salads like The Arugaler with spicy arugula with quinoa, caramelized walnuts, asparagus, jicama, feta in a lemon tahini dressing.

And, of course, there are the burgers. Offering the Impossible Burger, the gluten-free/soy-free Beyond Burger and a veggie superfood patty, there are five signature burgers to devour. We’re stoked to try the Shakin’ Bae-con variety made with Herbivorous Butcher’s maple bacon, and topped with gooey cheddar, grilled onion, spinach, guac, tomatoes, mayo and BBQ sauce.

Plus, they’ve got desserts like ice cream sandwiches and shakes.

Their brunch menu is still forthcoming, so stay tuned.

“It’s the place vegans can bring their carnivore friends to eat,” says Connor of Blinders. “Basically, it’s the place to go for everyone to enjoy amazing plant-based foods that taste amazing. I’d love people to leave saying ‘I can’t believe that was vegan … and break down that barrier. That’s why we chose the name ‘Blinders.”

The restaurant also is partnering with non-profits including Best Buddies and The Garden Foundation to hire young adults with intellectual disabilities.
