When Palms Casino Resort underwent its revamp and rebrand, one thing was added to the mix: a hefty serving of vegan options at the Palms restaurants. Lucky Penny, the Palms’ causal 24/7 restaurant, is the perfect spot for a quick lunch, casual dinner or post-APEX nightclub grubbing.

The best part? Lucky Penny boasts an entire vegan section on its menu, making it one of the most vegan-friendly options at the Palms.

Lucky Penny’s vegan menu has a wide variety of dishes (including plenty of gluten-free options). Lighter vegan items include fresh juices (protein powder may be added for an extra charge), a seasonal fruit plate and salads like the refreshing Super Salad made with chopped spinach and romaine, garbanzo beans, cucumbers, chia seeds, tomatoes and almonds tossed together in a sesame dressing.

In keeping with the hot trend, Lucky Penny also offers an avocado toast which is basically three mini salads served on crispy corn tortillas and topped with chopped avocado, green papaya shreds and pomegranate salad with pepitas and tajin.

The menu also includes vegan staples such as sriracha roasted cauliflower (yessss!!), a vegan inspired mezze board and the  popular Impossible Burger with a Thousand Island-style spread and a side of crinkle fries. Even though we’ve tried many takes on the Impossible Burger, Lucky Penny’s sauce and homemade pickles made this one tough to put down once we picked it up.

The penne bolognese is a green lentil penne with Impossible crumbles in its bolognese sauce, along with vegan parmesan shreds. Black bean noodles, chopped tomato, charred corn, black beans, zucchini ribbons and cilantro make up the colorful Black Bean Pasta — which also happens to be gluten-free!

Make sure to save room for a sweet treat! Lucky Penny offers an avocado and berry torte which is a light, thin tofu coconut cake with an avocado chocolate mousse and raspberries —  perfect for sharing, and a great way to end the meal!
