A new Las Vegas vegan restaurant is opening in May

There’s a new Las Vegas vegan restaurant set to open May 2021. John and Tabitha Simmons, the creators of Firefly* and Tacos & Beer, have partnered with Amelia Cooper to open Graze Kitchen, a vegan restaurant in Las Vegas.

“I’m always on the hunt for amazing food,” says Tabitha, who had tried Cooper’s food a few times during quarantine. “It’s some of the best vegan food I have ever had. It’s really great produce-forward food with lots of flavor.”

She thought Cooper’s cuisine was just what the city needed. It was time to open a vegan restaurant in Las Vegas.

“I called her up,” Tabitha shares. “If you don’t ask the answer is always ‘no’. So, I asked ‘what do you think about starting a restaurant.'”

And the rest is history.

The new Las Vegas vegan restaurant

The new restaurant is located on Warm Springs and Buffalo in Southwest Las Vegas. The 1400-sqaure-foot Graze Kitchen features Cooper’s signature style of cuisine — chic and fresh, paired with a side of feeling good.

The self-proclaimed obsessive home-cook is taking her talents to Graze to create hearty, vibrant plant-based foods. Think a menu featuring housemade proteins like whole foods burgers, cashew cheese and seitan.

“We want to have familiar, comforting flavors for those who want all the nostalgia but none of the meat,” explains Cooper.

Cooper and team are in full swing with menu development and are waiting to announce a grand opening.

Graze Kitchen is set to serve a variety of dishes, she reveals.

What to expect from the new vegan restaurant in Las Vegas

First, there’s the Brussels sprouts salad. It comes with dates, smoked almonds and a maple-mustard dressing tossed with BBQ seitan skewers.

Another salad on the menu is the vegan cobb. The salad has her signature deviled tofu (we’ve had it and it’s exceptional). It also has crispy chickpeas, smoked tempeh crumbles, diced tomatoes and onion with a white-balsamic vinaigrette.

Then, for the main course expect eats like a seitan picatta with herb-garlic rice pilaf and roasted cruciferous veggies.

Finally, there’s dessert at the Las Vegas vegan restaurant.

Cooper shares a few plans like lemon crinkle cut cookies that are “like fluffy clouds of the happiest sort”. Also expect chocolate coffee mousse with coconut whip and more.

Brunch isn’t forgotten here. Plan on house specialties like fried maple-spiced oatmeal. It’s comes coated in cornflakes and fried crispy, then topped with maple syrup.

“It’s the most lavish, decadent oatmeal of your dream,” says Cooper.

Drinks include a Magic Mocha featuring ashwaganda-spiked housemade chocolate syrup, oat milk and frothy whipped coffee. 

The vegan restaurant in Las Vegas also has infused teas, booze-y drinks like a kombucha mimosa and seasonal beverages.

Plan on trying Graze Kitchen before it opens its doors

Before the opening, the team is holding special events and pop-ups.

“We are too excited to wait for the grand opening, so we are pre-gaming with off-the-menu pop-ups,” explains Cooper. 

The Las Vegas vegan pop-ups actually began in late 2020 with their holiday feast. They continue through the winter.

Next up is an online cooking class and kit for two on Jan. 30, followed by a Mardi Gras kit on Feb. 16.
