If you aren’t on a budget, restaurants at the Wynn and Encore are a safe bet for vegan dishes since every hotel-owned restaurant has vegan options.

For fancy-pants Asian dining in an opulent setting, complete with waterfall-side seating, Mizumi is your spot. 

Let’s get this out of the way first: you will spend money here. And, if you’re drinking, you will spend lots. And while you can get some variety of these options off-Strip, you’re paying for the ambience and posh location.

The food? It’s pretty good. Of course, we get super excited when vegan miso soup is an option (curses to you, fish sauce), but Mizumi offers more than a veganized version of the soup.

For starters, try the Organic Agedashu Tofu. It’s another one that is stupidly hard to find in most Japanese spots, so again, we were stoked for this vegan version. This appetizer features organic tofu, veggie dashi, watermelon radish, ginger, daikon, and microgreens. Presented at your table dry, the server makes a small presentation delicately pouring the kanzuri-soy reduction over the morsels.

There are two sushi rolls that are vegan, the more creative being the spicy tofu option.

The only Korean option on Mizumi’s menu is the Bi Bim Bap. Which also comes in a vegan version. This traditional dish is filled with seasoned veggies, tamaki, rice, sesame oil and a Korean chili sauce all stirred together (by your server). There is also a gardein option, but let’s be real. You’re dining at Wynn. Spend those hard-earned dollars on stuff you can’t buy in the freezer section of your local grocery.

Mizumi also features a Robatayaki menu (it’s OK, we had to google it, too). Veggies are skewered and slow-grilled over hot charcoal and then delivered to your table. These guys, particularly the mushrooms, make a healthy little addition to your meal.
