Mangia, bevi and divertiti. Eat, drink, and enjoy yourself! That has been Ferraro’s Italian Restaurant’s motto since 1985. The very popular restaurant located just off the Vegas Strip attracts both tourists and locals with its modern take on old family recipes, fresh ingredients, and classy setting. Ferraro’s expanded its vegan offerings in spring 2019 and is now one of Las Vegas’ Italian vegan-friendly restaurants.

The best part? They went from having only three or four vegan options total to having that many in each category of dishes.

Let’s start with salad since they don’t have any vegan options for the complimentary bread.

The vegan salads at Ferraro’s aren’t the typical run-of-the-mill salads. They’re pretty awesome, actually.

We’re partial to the carrot salad, a starter made up of spicy roasted rainbow carrots sliced in ribbons and topped with sorrel pesto, golden raisins and toasted almonds.

Then there’s the Mimmo, a play off the classic caprese salad, but with avocado instead of mozzarella.

Finally, Ferraro’s offers pan-roasted artichoke hearts with garlic sauce, parsley emulsion, and calabrese pepper pesto.

If soup is more your jam, you’re in luck. Ferraro’s has three tasty vegan soup options: minestrone, lentil, and split pea.

Ferraro’s homemade pasta options are sure to satisfy your carb cravings — from almond ricotta ravioli with seasonal mushrooms to sweet potato gnocchi with summer garden vegetables.

They also have a risotto caprese that comes topped with vegan mozzarella, basil and a pesto drizzle.

If you want something heartier, order up the cavatelli bolognese made with little hollow spinach pasta and tossed in Bolognese sauce with soy crumbles.

If pasta isn’t your thing, guess what? You’ve still got three alternatives!

There’s the vegan pollo, a Gardein scaloppini with a lemon-caper sauce served next to a side of sauteed broccoli rabe.

For a more traditional Italian option, order the eggplant parmigiana complete with melty, gooey vegan cheese and a stack of thinly sliced eggplant and topped with pomodoro sauce and basil.

The other option is a bit more basic, but perfect if you’re looking for something simply: the seasonal garden veggie plate topped with micro greens, olive oil and a balsamic reduction.

If you happen to have any room left (good luck), Ferraro’s rounds out their vegan offerings with sorbetto. Ask your server for flavor options.

Ferraro’s updates its menu seasonally, so plan on seeing even more vegan offerings in the future.
