Here’s the deal with Tivoli Village’s Echo & Rig: the food is delicious. And farm-to-table. And oh-so-pretty. It’s also home to a first-floor butcher shop. If you can get past that (and its status as a steakhouse, but, let’s be real, steakhouses in Vegas often have some of the best vegan eats of all the omni restaurants) and make it upstairs to the airy dining room and patio, then you’re in for a treat.

Let’s start with brunch, since vegan options at brunches are few and far between unless you go to a vegan restaurant or hit up the Las Vegan hotels that are super vegan-friendly: Wynn or Encore. There are plenty of tasty options for brunch (and even more if you tweak existing items). If you’re in the mood for a traditional breakfast, then it’s steel cut oats.

However, if you’re there for more of the lunch part of “brunch” you can order up items like the tomato and watermelon salad, a fresh dish of juicy watermelon and tomatoes with cucumber and red onion. Or, if you’re feeling hipster, Echo & Rig has one gorgeous avocado toast for devouring. Served on a grilled sourdough baguette, this toast comes complete with shishito peppers for a nice little kick. Other options include the Over the Rainbow Salad (our favorite) with quinoa and faro and heaps of veggies, as well as home potatoes and fries.

For lunch and dinner, those same brunch options exist, along with a few small plate/veggie options like sweet potatoes or brussel sprouts with pistachio and fresh lemon.

If you’ve got a sweet tooth aka desire for dessert, Echo & Rig also has seasonal sorbets and berries.

Also, while this is totally not vegan, we do want to point out that the staff here make it a point to let you know that the meat they source comes from animals which are “humanely raised” (yeah, we know) and that they know where each piece comes from/have seen their conditions/know the farmers. It doesn’t make the fact that they are being killed any better, but it is nice to know that at least this spot cares a little more than others in town who don’t look for “better” conditions for their animals.
