The wave of Italian restaurants adding vegan options to their menus in Las Vegas is a trend we’re digging. This summer, Ferraro’s launched its vegan options, followed by Bootlegger. Anna Marie’s Italian Cuisine is another Italian restaurant in Las Vegas with vegan options.

Anna Marie’s Italian Cuisine, located on the corner of Tropicana and Hualapai, is a family-owned and operated restaurant with classic Neapolitan dishes. Helmed by Chef Raffaele, his family recreates recipes that have been handed down through generations. What we truly love is that Anna Marie’s offers a full vegan menu that includes salad, a veggie hero, pizza, and lots of yummy pasta. We also love their massive servings, so come hungry.

Start your meal with the bread basket, it’s vegan-friendly. Ask for olive oil and balsamic for dipping, but be sure to save some bread for later in the meal to soak up Anna Marie’s unbelievably delicious red sauce (we’re still dreaming about it).

We’re huge pizza fans, so let’s start with that. Anna Marie’s vegan pizza – the Verde – features a wood-fired crust (straight out of Chef’s hometown of Napoli) topped with sautéed escarole, spinach, garlic and olive oil. The crust is straight out of Napoli, the chef’s home town. They don’t have vegan cheese here, and it’s ok because this pie is loaded with flavor without it.

What’s an Italian restaurant without pasta? Anna Marie’s vegan menu has capellini with marinara, as well as penne and broccoli tossed with garlic and olive oil, and spinach marinara with rigatoni.

But, those aren’t the only pastas. Get your fill of veggies and order the penne primavera, a sauce-free pasta dish packed with zucchini, carrots, mushrooms, onions, garlic and diced tomatoes. Or, go the marinara route and get the eggplant with spicy sauce, a linguini pasta with eggplant, plum tomatoes, basil, garlic, and spices.

But the vegan dish that truly steals the show at Anna Marie’s is the spaghetti caponata. This dreamy dish has sautéed eggplant, onions, basil, garlic, and spicy cherry peppers that give it a slight kick. It’s all folded into the house marinara sauce (one of the best marinara sauces in town, by far!) and poured on top a plate of spaghetti. We wish our Mom’s spaghetti was this good!
